I am a winemaker and cork vendor by day and a chef by night.
Creating nine destinctive courses gives the diner a much more complex and exciting dining experience and it gives me the unparelleled opportunity to experiment with ingredients, flavors and textures. I understand creating flavor in every bite and every sip. My understanding of both gives me a great ability to perfectly compliment my food flavors with so many different wines. I have been collecting wine for over 33 years and pull from my cellar for every dinner.
