Description

People ask me two questions all the time: “What do you do?” and, “Why do you do it?”. It has taken me some time to hone the answer to the first question, but I finally believe I have the most concise description of what I do - I plan and execute nine-course seven-wine internationally inspired, locally driven modernist cuisine dinners in private locations (underground) or in public venues (pop-up). I hope this isn’t too much banal jargon, but it summarizes our dinners as best I can. The answer to the second question is easy - I want to be a great chef. I believe the only way to be a great chef is to hone your skills and experiment as much as you can. These dinners give me the opportunity to hone my skills and the venue to experiment with new ingredients, techniques and equipment. I don’t make any money, but it hopefully covers my costs and it certainly gives me willing people to experiment upon. I try not to think of myself as a culinary Dr. Frankenstein.

Du Jour Dining is back after an exciting December of six dining events, five of which were private affairs, so it is great to be back with our first 2012 public event. We at Du Jour Dining have been experimenting wildly over the past month with new techniques, recipes, ingredients and equipment, reading many new books, searching out the latest modernist equipment and ingredients, tasting far too many wines and finding new farms and ranches to supply us with the tastiest and most interesting ingredients.

This next dinner at 7PM on Saturday, January 28th will be in the town of Sonoma and is limited to 12 people only. It features some very exciting dishes, some tried in December and other brand new creations. We have the very best of the season including: Dungeness crab, white and black truffles, savory ice cream, green and white asparagus, fluke, Meyer lemons, black-eyed peas, edamame, crema de lardo tartuffo, red wattle pork belly, lalo lettuce, parsnips, sorrel, fingerling potatoes, olio verde and sheep’s milk yogurt.
